Black Eye Pea Salad
This salad is perfect for spring and summer evenings. Use the freshest tomatoes available and really nice olive oil. Be careful not to cook the peas to mush.
This goes perfect with other meze or just by itself. It is perfect with home grown herbs. Here is what you need:
prep time: <20 minutes
cook time: 30 - 40 minutes
serves: 4 with other dishes
1 c. dried black eye peas
1 large, ripe tomato - chopped
1 small bunch parsley - chopped
2 sprigs fresh oregano - chopped
1/2 red onion - diced
2 tsp. za'atar
1 lemon - juiced
1/4 c really nice olive oil
salt and pepper to taste.
bring black eye peas to boil in a saucepan. then reduce heat to med low and simmer until tender. About 30 minutes - drain and rinse.
combine tomato, onion, herbs, spice blend, salt and pepper in a bowl. Add lemon juice and olive oil
Add to peas. Refrigerate.
