Two Colorful Spreads

Havuç Tarator ve Pancar Tarator


These two spreads are a great for any #meze night with friends. They also make a really nice light meal with bread. While these are both different, they process is relatively the same.

Here is what you need:


prep time: <1 hr

cook time: 15 minutes

Serves: 4


Beet and Pistachio Spread


4 red beets, tops removed

1/4 c pistachios plus a few for garnish

3 cloves garlic, crushed

1/4 c nice olive oil

1/2 tsp thyme

1/4 thick plain greek yogurt

3 TBSP mayonaise

salt and pepper to taste


  1. place the beets in a pot large enough to hold them and cover them with cold water and a bit of salt. Bring to a boil and cook until very tender.

  2. remove the beets, cool under cold water and reove the peel. It should come off easy.

  3. Cut the beets in half and put them in a #cuisinart or other food processor.

  4. add pistachios and crushed garlic. Process and add olive oil.

  5. remove to a bowl when beets are spreadable. Add spice blend, fold in mayo and yogurt. Adjust seasoning

  6. Drizzle with olive oil and crushed pistachios to serve

Carrot Spread


2-3 large carrots, peeled and grated

4 cloves crushed garlic

1/4 c olive oil

1 tsp. ground cumin

1 tsp. coriander

1/2 tsp. fenugreek

1/4 c Greek yogurt

3 Tbsp. Mayonaisse

salt and pepper to taste


  1. In a large pan or skillet, fry garlic and cumin for a few minutes until softened but not browned. Add shredded carrots.

  2. Cook carrots until tender and add spice blend and salt and pepper

  3. place into a bowl and let the mixture cool. Fold in yogurt and mayo

  4. garnish with oregano leaves and a drizzle of olive oil
